Makes approx. 6 servings.
Ingredients:
- 1 and 1/4 cups all-purpose flour
- 1 and 1/3 cups vanilla soy milk
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 2 tablespoons white sugar
- 1 tablespoon baking powder
- 1 tablespoon ground cinnamon
- 1 teaspoon salt
- 3 tablespoons vegetable oil
- 1 teaspoon vegetable oil for skillet
Instructions:
- In a large bowl, whisk together flour, baking powder, cinnamon, salt and sugar. Mix well.
- Whisk in milk,egg, vegetable oil, and vanilla extract.
- Mix well and then let stand for 5 minutes for extra fluffiness.
- In a large skillet or griddle, heat the teaspoon of vegetable oil over medium heat.
- Add 1/4 cup batter to pan. Cook for about two minutes or until there are bubbles in the batter, and then flip pancake to opposite side. Cook for approximately another 2 minutes or until lightly browned and center is set.
- Serve immediately and enjoy with a delicious mimosa.
